01 - 1.5 lbs ground beef (80/20 blend recommended)
02 - 0.5 lb ground pork
03 - 1 cup breadcrumbs
04 - 1 medium onion, finely chopped
05 - 2 cloves garlic, minced
06 - 2 large eggs
07 - 0.5 cup whole milk
08 - 2 tablespoons Worcestershire sauce
09 - 2 tablespoons ketchup
10 - 1.5 teaspoons salt
11 - 1 teaspoon black pepper
12 - 0.5 teaspoon dried thyme
→ Meatloaf Glaze
13 - 0.5 cup ketchup
14 - 2 tablespoons brown sugar
15 - 1 tablespoon Dijon mustard
→ Mashed Potatoes
16 - 2 lbs russet potatoes, peeled and cut into chunks
17 - 0.5 cup whole milk, warmed
18 - 0.25 cup unsalted butter
19 - 0.5 teaspoon salt, or to taste
20 - 0.25 teaspoon black pepper
# Directions:
01 - Preheat oven to 350°F and line a loaf pan with parchment paper or lightly grease it.
02 - In a large bowl, combine ground beef, ground pork, breadcrumbs, onion, garlic, eggs, milk, Worcestershire sauce, ketchup, salt, pepper, and thyme. Mix gently until just combined without overmixing.
03 - Transfer mixture to the prepared loaf pan, pressing lightly to shape. In a small bowl, mix ketchup, brown sugar, and Dijon mustard. Spread glaze evenly over the top of the meatloaf.
04 - Bake for 55 to 60 minutes or until internal temperature reaches 160°F. Let rest for 10 minutes before slicing.
05 - While meatloaf bakes, place potatoes in a large pot with salted cold water. Bring to a boil and cook until tender, about 15 to 18 minutes.
06 - Drain potatoes and return them to the pot. Add warm milk, butter, salt, and pepper. Mash until smooth and creamy, adjusting seasoning as needed.
07 - Slice meatloaf and serve hot alongside creamy mashed potatoes.
