I first served this to my family on a cold winter night and everyone loved the rich flavors and tender beef.

Ingredients

  • Beef: 2 lbs (900 g) beef stew meat, cut into 1 inch pieces
  • Vegetables & Aromatics: 1 large onion, finely chopped, 3 cloves garlic, minced, 12 oz (340 g) cremini or white mushrooms, sliced
  • Sauce: 2 cups (480 ml) beef broth, 1 tbsp Worcestershire sauce, 2 tbsp tomato paste, 2 tsp Dijon mustard, 1 tsp salt, ½ tsp black pepper, 1 tsp paprika, 1 cup (240 ml) sour cream (plus extra for garnish), 2 tbsp all purpose flour
  • Noodles & Garnish: 12 oz (340 g) egg noodles, 2 tbsp fresh parsley, chopped (optional)

Instructions

Step 1:
Place the beef, onion, garlic, and mushrooms in the slow cooker.
Step 2:
In a medium bowl, whisk together the beef broth, Worcestershire sauce, tomato paste, Dijon mustard, salt, pepper, and paprika. Pour over the beef mixture in the slow cooker.
Step 3:
Cover and cook on low for 6 hours, or until the beef is very tender.
Step 4:
In a small bowl, mix the sour cream and flour until smooth. Stir this mixture into the slow cooker and cook on high for 20 30 minutes, or until the sauce thickens.
Step 5:
Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.
Step 6:
Serve the beef stroganoff over the egg noodles, garnished with fresh parsley and an extra dollop of sour cream, if desired.
