# Directions:

01 - Heat olive oil in a large deep skillet over medium heat. Add chopped onion and cook for 4-5 minutes until translucent and softened.
02 - Stir in minced garlic and diced red bell pepper. Cook for 2-3 minutes until slightly softened but not browned.
03 - Add ground cumin, smoked paprika, coriander, and chili flakes. Fry for 1 minute, stirring constantly until fragrant.
04 - Stir in tomato paste, chopped tomatoes, and season with salt and pepper. Simmer uncovered for 10 minutes, stirring occasionally, until sauce thickens slightly.
05 - Add asparagus pieces, peas, and broad beans to the sauce. Cover and cook for 7-8 minutes until vegetables are just tender.
06 - Create small wells in the sauce using the back of a spoon. Crack eggs into wells, cover pan, and cook gently for 5-7 minutes until whites are set but yolks remain runny.
07 - Remove from heat. Sprinkle with chopped parsley or mint and crumbled feta. Serve immediately with lemon wedges and crusty bread.

# Expert Advice:

01 -
  • It turns ordinary eggs and vegetables into something that feels like a celebration
  • The sauce gets better overnight, so leftovers are actually exciting
02 -
  • Resist the urge to rush the sauce simmering step, it needs time to develop depth and concentrate flavors
  • Make sure your wells are deep enough so the eggs stay put instead of spreading across the whole pan
03 -
  • Use a pan with a lid that fits well, it makes all the difference for poaching the eggs evenly
  • Lemon wedges on the side are essential, that acid brightens the whole dish
