# What you'll need:

01 - 4 slices sourdough bread
02 - 4 slices sharp cheddar cheese
03 - 2 tablespoons unsalted butter, softened

04 - 4 ounces sliced cooked turkey breast

05 - 1/2 cup kimchi, drained and roughly chopped
06 - 1 tablespoon mayonnaise (optional)
07 - 1 teaspoon Dijon mustard (optional)
# Directions:
01 - Arrange sourdough slices and optionally spread mayonnaise and Dijon mustard on one side of each slice.
02 - Layer two bread slices with cheddar cheese, turkey breast, chopped kimchi, and another slice of cheddar; top with remaining bread slices.
03 - Spread softened unsalted butter evenly on the outside surfaces of each sandwich.
04 - Heat a large nonstick skillet or griddle over medium heat until hot.
05 - Place sandwiches in the skillet and cook for 3 to 4 minutes per side, gently pressing, until bread is golden brown and cheese has melted.
06 - Remove sandwiches from heat, allow to rest for one minute, then slice and serve warm.
