# What you'll need:

01 - 8 slices whole wheat or white sandwich bread

02 - 4 ounces cream cheese, softened
03 - 2 tablespoons mayonnaise
04 - 1/4 red bell pepper, finely diced
05 - 1/4 yellow bell pepper, finely diced
06 - 1/4 cucumber, peeled, seeds removed and finely diced
07 - 1 small carrot, peeled and grated
08 - 2 tablespoons chives or green onions, finely chopped
09 - Salt and freshly ground black pepper, to taste

→ Decoration (optional)

10 - 2 cherry tomatoes, sliced
11 - 2 tablespoons pomegranate seeds
12 - Fresh basil or parsley leaves

# Directions:

01 - Using a star-shaped cookie cutter, cut one star from each slice of bread, reserving scraps for other use.
02 - Mix cream cheese and mayonnaise in a bowl until smooth and creamy.
03 - Stir in diced red and yellow bell peppers, cucumber, grated carrot, and chives; season with salt and pepper.
04 - Spread a generous layer of the vegetable cream cheese mixture onto half of the star-shaped bread pieces.
05 - Top with the remaining star-shaped bread pieces to form sandwiches.
06 - Gently press cherry tomato slices, pomegranate seeds, and fresh herbs onto the top of each sandwich to resemble jewels.
07 - Arrange sandwiches on a platter and serve immediately or cover and refrigerate for up to two hours before serving.
